I was so thrilled that Scott found a place in Japan to try soufflé or fluffy pancakes! I’ve tried them at Burnt Crumbs in Irvine and couldn’t wait to try them at a restaurant in Japan. We went to The French Toast Factory in Akihabara - located within the Yodobashi Camera Multimedia building (basically a camera/electronics super store), just about a 3 minute walk from from Akihabara station. We ordered (you can do soufflé pancakes by 2 or 3 stack):
Iced Caramel Latte ¥590 + White Mocha ¥590
Strawberry Pancake ¥1150
Caramel Banana Pancake ¥1050

Has English on menu, server was really nice & double checked our orders. We visited around 11:15am on a Friday and we were seated almost immediately, when we left around 12pm and it looked like 3-4 parties waiting.
There’s of course French toast on the menu, but also a variety of other dishes like eggs bene & buttermilk fried chicken, loco mocos, burgers, salads, and pasta, noodle & rice dishes.
