Boldo Restaurant Now Open in Downtown Santa Ana!


Created by Chef Paul and Judy Chamberlin, the new 'earth-to-table' restaurant Boldo, soft opened on July 2, 2014 with an intimate media preview of it's offerings. Apart of the 4th Street Market in East End - Downtown Santa Ana (market set to open this summer), this innovative dining experience uses only 'unadulterated and unprocessed - straight from soil, ocean, pasture, or tree branch'; and has an emphasis on locality and fostering long-lasting food partnerships. Guests enjoyed culinary delights and cocktails while learning more about Chef Paul's upbringing in learning how to prepare fresh caught fish and home/farm grown produce from his grandmother, as well as his passion for 'feeding people natural, healthy food that is good for their bodies, good for the farmers, and good for our planet'.
Guests also met and listened to (and got to bring goodies home from) other 4th Street Market local artisan eatery owners such as Dos Chinos, Portola Coffee Lab, Electric City Butcher, Chunk-n-Chip, and Lunchbox by Playground. I can't wait to experience all of the 4th Street Market craft food offerings, communal dining experience, and entertainment spaces.
Boldo involves and strives to seek local and direct relationships, and educate the community in the movement for earth-to-table sourcing. The restaurant works directly with West Coast Fishing Company for fresh fish, Riverside's GoneStraw Farms for raised cage-free chickens, and local growers.
Nutrition education, cooking mentorship, and community support includes working alongside programs such as the Tustin Memorial Academy's School Garden Program, OC Food Access Coalition, and Kid Works of Santa Ana; Boldo's currently developing their own campaign, the OC Yard Farming Initiative, and continually reaches out to and engage with a "variety of nonprofits, conservation groups, holistic doctors, neighboring businesses, and other 'like-minded folks' to improve human and environmental health within our community".
I could truly taste the difference in freshness with each carefully curated dish. I loved how the vegetables were displayed in a tub right on the counter and the chef could just grab from the produce to make each dish. It was a wonderful, quaint, and eye-opening experience.

About Boldo
Boldo's culinary initiative is to produce and serve nutritious food harvested that day. The standard menu item is a Bol, which will be a mix of whole foods sourced within a 250-mile radius of Boldo's location. Bols will come in different varieties - vegetables atop rice & beans, soups, salads, or seasonal fruit - and flavors will be influenced by cuisines from around the world. Boldo will also squeeze their own juices and steep their own teas using local herbs dried in a hanging rack inside the restaurant.
